It’s no coincidence that it’s part of our name. Mango is one of the most versatile and beloved ingredients in our kitchen. We use it in sauces, salads, cocktails like the Mango Colada, and of course, desserts. Its natural sweetness, smooth texture, and freshness make it a must-have on our menu.
2. Fresh Catch of the Day
Our location on the Caribbean Sea gives us daily access to fresh fish and seafood. Shrimp, lobster, mahi mahi, and the day’s catch (including special lobster nights) are some of the staples. Many come straight from local fishermen, ensuring freshness, flavor, and a true connection to the island community.
3. Plantains: Sweet, Fried, or the Perfect Side
Whether in the form of tostones, maduros, or as part of a tropical stir-fry, plantains show up in many of our dishes. They add texture, energy, and a flavor that runs through all Caribbean cuisine. In our kitchen, we use them to balance bold flavors or simply as a tasty snack.
4. Caribbean Spices: Small but Powerful
You might not see them, but you’ll definitely taste them. Ginger, allspice, clove, local garlic, and touches of hot chili are used to enhance flavors without overpowering them. These spices are part of our culinary DNA, helping to build dishes with depth and personality.

Lobster, shrimp, and conch are regular features on our menu. Caribbean seafood has a distinct taste and texture that shines in dishes like ceviches, risottos, and mixed grills. We always aim to use seasonal, locally sourced ingredients respecting nature’s rhythm and supporting our community.
