Most of the fish served at the restaurant comes from the waters of the Virgin Islands. In cases where the local supply is not sufficient to cover the amount of fish demanded, we use suppliers from Puerto Rico. In this way, we ensure that we always offer the highest quality, collaborating directly with the regional fishing communities and respecting the rhythms of local fishing.
Regarding the waters of the Virgin Islands, they stand out for their unique environment with extreme depths that are home to a very impressive biodiversity. Among the most important areas is the Puerto Rico Trench, to the north of the islands, which is considered the deepest part of the Atlantic Ocean, with a depth exceeding 8,400 meters. It is no less than the second deepest trench in the world, becoming not only a reference point in geographic terms, but also an outstanding area for sport fishing.
In addition to the Puerto Rico Trench, we must mention South Drop, located between St. John and St. Croix. Both trenches provide a perfect environment for pelagic species, such as tuna, wahoo and mahi mahi. These are species that inhabit open waters and are highly valued in gastronomy both for their flavor and for their versatility of use in the kitchen. The fishing of these species is carried out on the edges of the trenches, where the marine platform descends abruptly, facilitating access to them in their natural habitat.
It should also be noted that in addition to these migratory species, there are others that inhabit more specific areas. For example, snapper or grouper tend to prefer reefs, where they find both shelter and food. These fish are distinguished by the fact that they live in sheltered areas and do not usually swim freely in open waters. For this reason, at Morgan's Mango we continually evaluate the conditions of origin of the fish in order to respect the biodiversity of each particular habitat and maintain the ecological balance.
